Why do we keep butter in the fridge but not ghee?

Butter contains water, which allows microbes to grow, so it needs refrigeration. Ghee has no water content, so microbes cannot survive in it and it can be stored safely at room temperature for months.

  1. Butter is made from milk and still contains water, making it an ideal place for microbes to grow if left outside, so it needs refrigeration. Ghee, however, is made by heating butter to remove all water content. Without water, microbes cannot survive, so ghee remains safe at room temperature for a long time without spoiling.
