The cellulose of the food is digested here by the action of certain bacteria which are not present in humans.

Ruminants, like cows and sheep, possess a complex stomach with a rumen housing bacteria and protozoa that produce cellulase enzymes. These enzymes break down cellulose into digestible components, providing nutrients for the animals.
Humans lack the necessary enzymes, particularly cellulases, to break down cellulose. Consequently, humans cannot digest cellulose, and it passes through the digestive tract as dietary fiber, aiding in bowel movements without contributing to nutrient absorption.
