We use evaporation to separate salt from saltwater because when water is heated, it turns into vapor, leaving the salt behind. This method works because salt has a much higher boiling point than water and does not evaporate. By allowing the water to evaporate in the sun or by heating it, the salt is left behind as solid crystals. This is a simple and effective way to obtain salt from seawater.
