Why is one side of a puri thinner than the other?

When a puri is fried, steam forms inside and pushes the dough outward. The side with slightly less thickness expands more, stretching thinner than the other. This uneven puffing causes one side to become thinner than the other.

  1. The puri puffs up because moisture inside turns into steam when fried, pushing outward. If the dough isn’t rolled evenly or if one side is slightly weaker, that part expands more under pressure. As a result, one side of the puri becomes thinner than the other. Factors like dough thickness, flour type and oil temperature also influence this uneven expansion. Even scientists continue studying the mechanics of such simple, real-world phenomena.
